Korean Spicy Noodle and Cheese Sandwich, No Added Refined Sugar

This Korean spicy noodle and cheese sandwich is a quick late night bite, crisp on the outside with cheese pulling inside and a strong chili kick. The hardest part is draining the noodles properly, because wet noodles turn the bread soggy.
Pan toasting the bread in butter until golden and crisp before filling it is the key move. The common mistake is tossing the noodles with too much sauce, which makes the filling run and leaves the sandwich impossible to hold.

Method
Set a non stick pan on the stove and add 2 tablespoons unsalted butter. Once the butter has melted completely, lay in 2 slices of sandwich bread and toast until both sides are golden and crisp, then take them out to cool.
Bring a pot of water to a boil and cook the block of spicy noodles for 3 to 5 minutes. Once the noodles are soft, lift them out, drain them very well and put them in a bowl.
Add the seasoning sachet and the sauce sachet from the noodle pack to the bowl and toss with chopsticks so the strands soak up the seasoning.
Put one toasted slice on a clean board and layer on 1 tablespoon shredded mozzarella, 3 cheese sticks, some of the dressed spicy noodles, another 3 cheese sticks, the remaining 1 tablespoon mozzarella and 2 slices of cheddar.
Lay the second slice of bread on top to close the sandwich.
Microwave the sandwich for about 2 minutes until the cheese melts completely. Without a microwave, toast it in a covered pan over low heat so the cheese melts evenly.
Tips
Drain the noodles thoroughly before filling, because a dry filling keeps the bread crisp.
Toss the noodles with just enough sauce, since extra sauce leaks out of the filling when the sandwich is cut.
Toast the bread in butter first, as a golden crisp crust stands up to the heat of the filling.
Without cheese sticks, more shredded mozzarella gives the same pull.
Lettuce and fresh tomato alongside keep it from feeling heavy.
