How to Make Chuoi Nuong Mat Ong (Honey Baked Bananas)
Sweets and drinksBaked GoodsVietnamAbout 20 minutes
Honey baked bananas take about 20 minutes. Picking the fruit is the hard part, because bananas that are too ripe collapse in the heat and lose their shape. Chuoi tieu, just ripe, is right.
The bananas fry golden on both sides first, then lime juice goes into the pan and the heat comes down. Lime balances the sweetness of ripe banana and honey.
This batch weighs about 375g, at roughly 218 calories per 100g.
Method
Peel 3 chuoi tieu and fry them in a pan until golden on both sides.
Squeeze the juice of 1 lime into the pan and turn the heat down.
Move the bananas to a plate and drizzle 1 tablespoon honey evenly over them.
Bake in the oven or microwave at 160 degrees C for about 10 minutes to finish.
Tips
Lime juice in the pan balances the sweetness of ripe banana and honey.
Chuoi tieu that is just ripe holds its shape in the heat instead of collapsing.
Both sides go golden in the pan before the honey is added, since honey added early burns.
Honey is still sugar, so 1 tablespoon is the right measure.
Ten minutes at 160 degrees C is enough, because longer draws water out of the fruit.
