Chicken Feet in Thai Coconut Sauce, Made with Monk Fruit Sweetener

Chicken feet in Thai coconut sauce make a snack that is hot and rich at once. The feet stay springy, the sauce clings to them and carries the scent of Thai chili sauce.

The difficulty is the cooling, since feet left to cool on their own lose their bite completely. Boil the feet with ginger and wine, and drop them straight into a basin of ice water as they come out. That single step decides the texture of the whole batch.

This batch weighs about 822g, at roughly 194 calories per 100g. Scatter cilantro over them at the table, and a few hours in the fridge before eating makes them better still.

Method

  1. Wash 500g chicken feet and cut off the nails. Peel, wash and slice the ginger. Peel and mince 1 shallot and 3 cloves of garlic. Wash and mince the red chili.
  2. Boil the chicken feet with the ginger and the wine. Once they are cooked, lift them out and drop them straight into a basin of ice water so they stay springy.
  3. Mix 2 tablespoons fish sauce, 2 tablespoons kOBE Monk Fruit Blend, 1 tablespoon lime juice and 1/2 tablespoon Thai chili sauce.
  4. Heat cooking oil in a pan and fry the shallot, garlic and minced chili until fragrant.
  5. Pour in the seasoning mixture and stir, then add 200ml coconut milk and cook over low heat.
  6. Once the sauce simmers gently, add the chicken feet and toss until they are coated. Scatter cilantro over the top at the table.

Tips

  • Dropping the chicken feet into ice water straight after boiling is the step that decides their springy bite.
  • The dish needs no tamarind, as the lime juice carries the sourness and the coconut milk carries the richness.
  • Thai chili sauce is sold in supermarkets, and ordinary chili sauce with a little sate chili oil stands in for it.
  • Boil the feet with ginger and rice wine, because plain water leaves the smell in place no matter how strong the sauce is.
  • Toss the feet in while the sauce is still gently warm and then stop, since further cooking turns the skin flabby.
