How to Make Deviled Eggs with Mustard Mayo Filling

Deviled eggs with a mustard mayo filling make a fast starter that still looks carefully done. The yolks are mashed smooth with a rich dressing, piped back into the whites and topped with crisp bacon.

The hardest part is peeling the eggs cleanly, since a torn white loses half its shape. Eggs brought to the boil, taken off the heat and left covered for 15 minutes come out evenly yellow with no gray ring. Ten minutes in cold water before peeling loosens the shell from the white.

This batch weighs about 241g, at roughly 179 calories per 100g.

Method

  1. Put 3 large chicken eggs into a pot, cover them with cold water, bring it to a full boil, then turn off the heat, cover, and leave them for 15 minutes.
  2. Meanwhile, heat a small dry pan and cook 2 slices of bacon over medium heat until deeply browned and crisp. Drain them on paper towel and crumble them.
  3. Pour off the hot water, sit the eggs in cold water for 10 minutes, then peel them.
  4. Halve each egg lengthwise and lift the yolks into a bowl with a small spoon.
  5. Mash the yolks loose, add 1 tablespoon Lean Mayo, 1 teaspoon yellow mustard, 1/4 teaspoon paprika, a little salt and pepper, and mix until it is as smooth as cream. Taste and adjust.
  6. Spoon or pipe the filling back into each white, scatter over the crumbled bacon and finely sliced spring onion, and serve at once.

Tips

  • Twenty minutes is the limit for boiling, as longer leaves the yolk gray rimmed and chalky.
  • Yellow mustard is sold in every supermarket, and a very small amount of green mustard stands in, since it is much sharper.
  • A little mild chili powder replaces the paprika for color.
  • Lean Mayo gives a gentle richness, so for a bolder filling add a little more mustard rather than more salt.
  • Piping the filling from a piping bag gives the neat finish you see in restaurants.
  • Made ahead, keep the filling and the whites separate in the fridge and pipe them just before serving.
