How to Make French Braised Duck Legs in Orange Sauce

This makes a generous plate, tender duck against the sweet and sour of sanh orange. The peel is the difficulty, sharp enough to leave a bitter edge on the plate.

The shredded peel is boiled twice, squeezed dry and given fresh water in between. The orange sauce is made separately with unsalted butter and fried garlic, then spooned over at the table.

This batch weighs about 1.1kg, at roughly 76 calories per 100g.

Method

  1. Clean the duck legs, season them with salt and 3 tablespoons oyster sauce and leave them for 15 minutes.
  2. Halve the orange and squeeze the juice into a separate bowl. Peel off the outer skin, cut it into strips and boil it thoroughly twice to take out the sharpness.
  3. Cut the carrot, chayote and potato into bite sized pieces. Cut the red horn chili into strips. Halve the cherry tomatoes.
  4. Fry the duck legs briefly to firm the surface. Put them into a pot of broth with the carrot, chayote, potato, orange peel, chili and cherry tomatoes. Season with 1 teaspoon kOBE Monk Fruit Blend, 1 teaspoon seasoning powder and 1 teaspoon minced shallot and garlic. Once it boils, turn the heat low and braise for about 30 minutes until the duck is tender.
  5. Make the orange sauce: melt 10g unsalted butter, fry the minced garlic until golden, add the orange juice and simmer over low heat, then season with 1/2 teaspoon salt and pepper.
  6. Arrange the duck legs and vegetables in a deep dish, spoon the orange sauce over and scatter 1 teaspoon finely chopped cilantro on top.

Tips

  • To take the bitterness off the orange peel, boil it once, lift it out and squeeze it dry, then boil it thoroughly in fresh water.
  • Sanh oranges can be swapped for imported yellow oranges, which are sweeter with less bitterness.
  • Chayote can be swapped for daikon radish or zucchini at the same weight.
  • Add the orange juice last and keep the heat low, since a hard boil turns the sauce bitter.
