Pancakes Without Baking Powder

An empty tin of baking powder is no reason to skip pancakes, which is why so many people look for a version without it. The reward is a light, airy crumb that smells of milk. The risk is losing all that lift with heavy handed mixing.

The egg whites are whipped to soft peaks, the point where lifting the whisk leaves a tip that curls over, then folded in a few additions at a time in one direction. The whisk and bowl need to be spotless, since a trace of oil or yolk stops the whites from rising.

This batch weighs about 516g, at roughly 160 calories per 100g.

Method

  1. Mix 150g cake flour, 13.5g kOBE Monk Fruit Blend and 2g salt, then sift them together. Add 240ml unsweetened oat milk and stir until the batter is thick and smooth.
  2. Separate the whites and yolks of 2 chicken eggs. Add the 2 yolks to the batter and stir again.
  3. Whip the 2 egg whites with a hand mixer to soft peaks, the point where lifting the whisk leaves a tip that curls over. The whisk and bowl must be clean, with no trace of oil or yolk.
  4. Add the whipped whites to the batter a few spoonfuls at a time, folding them in with a flat spatula from the bottom upwards in one direction, never stirring in circles, so the air stays in.
  5. Set a nonstick pan over the heat, brush it with a thin film of cooking oil, then ladle in the batter and cook the pancakes one at a time until golden on both sides.

Tips

  • Fold the batter gently and in one direction for an airy pancake.
  • The bowl and whisk for the egg whites must be clean, with no oil or yolk, or they will not whip.
  • Spoon the batter into small thick mounds, since spreading it thin costs the pancakes their height.
  • Number 8 flour is sold at baking supply shops, and with no baking powder in this recipe the whipping of the whites has to be done properly.
  • Cook over low heat and turn only once the surface has colored.
