Tonkatsu Sauce, No Added Refined Sugar

This one is only mixing, with no pan involved. The difficulty is the balance, since the sour, salty and sweet notes and the ginger and garlic all have to come together, and tasting it the moment it is mixed usually feels disjointed.

Covered with plastic wrap, the mixture rests at room temperature for at least 30 minutes so the flavors settle into each other. Two to three hours in a glass jar in the fridge is better still.

This batch weighs about 384g, at roughly 98 calories per 100g. Kept in a glass jar, it lasts 7 to 10 days.

Method

  1. Set out a large clean bowl and add 240ml ketchup, 60ml soy sauce, 27g kOBE Monk Fruit Blend, 30ml mirin, 15ml worcestershire sauce, 2 teaspoons finely grated fresh ginger and 2 cloves finely minced garlic, one after another.
  2. Stir steadily with a wooden spoon or a whisk until the mixture is completely smooth and fully dissolved, with no grit and no lumps.
  3. Cover the bowl tightly with plastic wrap and let the mixture rest at room temperature for at least 30 minutes so the ingredients settle into each other.
  4. For a better result, pour the sauce into a clean glass jar, seal it and chill it for about 2 to 3 hours before using.
  5. Pour any remaining sauce into a clean glass jar, seal it tightly and keep it in the fridge, using it within 7 to 10 days.

Tips

  • Stir until the mixture is properly smooth, with no grit and no lumps.
  • Worcestershire sauce is sold at larger supermarkets and European grocers, and without it a little more ketchup plus a splash of vinegar brings the balance back.
  • Mirin can be swapped for glutinous rice wine.
  • Rest the sauce for at least 30 minutes at room temperature, or chill it for 2 to 3 hours for a better result.
  • Grate the ginger rather than mincing it, as larger shreds catch in the mouth when dipping.
  • This sauce goes with breaded pork, breaded chicken, potato croquettes and fried vegetables.
