Banh Chuoi Nuong (Baked Banana and Coconut Pudding Cake), No Added Refined Sugar

When ripe bananas have been sitting on the counter too long, banh chuoi nuong is the quickest way out. The cake is soft and moist, fragrant with coconut, with edges that catch a little on top.
The tricky part is marinating the bananas long enough without breaking up the slices. Slice the bananas 0.5cm thick and turn them very gently while marinating, giving them 30 minutes to take on the flavor. Keep a fifth of the slices back to arrange over the top.
This batch weighs about 1.6kg, at roughly 178 calories per 100g.
Method
Peel the bananas and cut them into rounds 0.5cm thick, keeping the slices even so they color nicely in the oven.
Put the bananas in a bowl, add 135g kOBE Monk Fruit Blend and 1 small glass of rum, turn them gently so they stay whole, then marinate for 30 minutes, or longer for more flavor.
Melt 50g butter and pour it into a separate bowl. Thinly slice or tear up 3 plain baguettes.
Put 50g all purpose flour, 200ml unsweetened oat milk, the melted butter and 200ml coconut milk in a bowl, crack in 1 egg and whisk until combined.
Add the bread and soak it for 5 to 10 minutes until soft, then add 1/2 teaspoon vanilla and the liquid drained from the bananas, and fold gently.
Fold in the marinated bananas, keeping about a fifth of the slices back to arrange on top.
Pour the mixture into a buttered pan, arrange the reserved banana slices over the top and bake for about 45 minutes until golden.
Tips
Choose bananas that are evenly yellow from stem to tip.
Avoid deep yellow fruit with green ends, which usually means the bananas were force ripened.
Without an oven, this works in a rice cooker, a microwave or a nonstick pan.
The cake needs to cool completely before slicing so the pieces hold their shape.
Soak the bread until it is properly soft before the bananas go in, since dry bread leaves hard pockets in the middle.
