These fritters come out shatteringly crisp and suit an afternoon snack. The tricky part is the batter, since a thick coating makes them heavy and they go soft fast.
The shredded sweet potato goes straight into lightly salted water as it comes off the grater, then drains without a second rinse. The batter rests for 30 minutes so it clings evenly. Fry over medium heat, spreading the shreds into a round with chopsticks, and turn each fritter once it colors.
This batch weighs about 1.2kg, at roughly 129 calories per 100g.
Method
Wash and peel 500g yellow sweet potato, then drop it straight into a bowl of lightly salted water so it does not darken.
Grate the sweet potato into long thin shreds, keeping the shreds in the salted water as you go. Lift them out to drain once done, with no second rinse.
Put 100g all purpose flour, 150g crispy frying flour, 4 tablespoons kOBE Monk Fruit Blend and 1 teaspoon salt in a large bowl and mix the dry ingredients together.
Add 50ml coconut milk, 100ml unsweetened oat milk and 200ml water gradually, whisking until the batter is smooth with no lumps. Rest the batter for 30 minutes.
Heat enough oil to cover the fritters. Add a small handful of shreds to the batter at a time, toss to coat, then lift them out with a slotted spoon so the excess batter drips off.
Slide the shreds into the hot oil, spread them into a round with chopsticks and fry over medium heat. Turn each fritter once it starts to color so it cooks evenly.
Tips
Lift the fritters onto paper towels at once and let them cool completely before boxing, since boxing them hot traps steam and softens them.
Three to five minutes at 150 to 160 degrees C brings the crunch back.
The sweet potato shreds have to be properly dry before they meet the batter, because any water left makes the coating slide off in the pan.
A full 30 minutes of rest lets the batter cling to the shreds more evenly.
A slotted spoon lets the excess batter drip off before the shreds hit the pan.
