This mung bean and duck egg che is an unusual bowl that people go back to. The mung beans turn floury, the duck eggs are rich, and the coconut milk carries the whole thing. The hard part is the heat, since the beans have to soften without breaking down completely.
The beans cook in 800ml of the second press of coconut milk with 500ml water, and the duck eggs are cracked in while the pot is at a boil. The thick first press of coconut milk goes in at the end along with the kombu kelp.
This batch weighs about 1.9kg, at roughly 136 calories per 100g. Ladle it into small bowls and serve straight away. It suits a cool evening.
Method
Soak 200g mung beans in water to cover for 60 minutes, then rinse them. Soak 20g kombu kelp until it swells and wash it well.
Put the mung beans, 800ml thin coconut milk and 500ml water into a pot and cook until the beans are soft, lifting the lid to stir once it boils, then covering again and cooking over low heat.
Crack in 5 duck eggs while the pot is at a boil and cook until the whites are set.
Add the kombu kelp, 225g kOBE Monk Fruit Blend and 300ml thick coconut milk, stir gently, and bring it back to a boil.
Stir in 1 teaspoon liquid vanilla, turn off the heat, and ladle into bowls.
Tips
Choose mung beans with a fresh green color and a glossy skin, since discolored or shriveled beans are poor quality.
Cook over low heat and stir gently, as vigorous stirring breaks the beans down.
Slip the eggs in while the pot is boiling so the whites set neatly rather than shredding.
The first press coconut milk goes in last to keep its aroma.
Cook the beans in thin coconut milk from the start for a rich taste, since adding it late leaves them bland.
Add the kombu kelp at the same time as the first press coconut milk, since going in early turns it limp.
