Coffee gelatin pudding is cold, faintly bitter with coffee and soft under the spoon. The appeal is a set that yields easily instead of standing firm like jelly. The tricky part is the heat of the milk, since letting it boil costs the smooth texture.
The gelatin soaks in cold water for 5 to 10 minutes to soften, then melts over a water bath until fully dissolved. The milk only warms enough to dissolve the kOBE Monk Fruit Blend and never comes to a boil. The cups then chill for 3 to 4 hours.
This batch weighs about 759g, at roughly 90 calories per 100g.
Method
Put 10g gelatin or 5 gelatin sheets in a small bowl with about 50ml cold water and soak for 5 to 10 minutes to soften, then microwave it or melt it over a water bath until fully dissolved.
Dissolve 2 to 3 sachets of instant coffee powder, about 6 to 9g, in 50ml boiling water, stir well and let it cool. Filter coffee works too, at about 60ml brewed strong.
Put 500ml oat milk in a pot with 80 to 90g kOBE Monk Fruit Blend, heat over low and stir until dissolved. Keep the milk warm and never let it boil.
Pour the coffee slowly into the milk and stir until combined.
Add the dissolved gelatin and stir until it runs evenly through the mixture.
Add 1 teaspoon vanilla and a pinch of salt, stir, then turn off the heat and let it cool slightly.
Pour into small molds or glass cups and chill 3 to 4 hours until fully set.
To serve, top with 100ml whipping cream whipped soft or a little grated chocolate.
Tips
For a richer pudding, replace part of the oat milk with cream.
A little cocoa powder turns it into a chocolate coffee pudding.
Keep the milk warm only, since boiling costs the pudding its smooth surface.
Let the coffee cool before it goes into the warm milk, as very hot coffee pits the surface.
The gelatin goes in last with the heat already off, since further cooking destroys its setting power.
