Dark chocolate brownies live or die on texture: a paper thin crackled top, a dense moist middle, a clear bitter cocoa edge and a soft sweetness behind it. The hardest part is watching the oven, a few minutes extra dries the middle out and the brownie character is gone.
The chocolate has to be completely cool before it meets the eggs, because heat cooks the eggs and turns the batter grainy. Fold the flour in with a spatula and stop as soon as the mixture turns smooth.
This batch weighs about 1.2kg, at roughly 351 calories per 100g.
Method
Melt 188g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 63g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
Cut 250g of unsalted butter into small pieces, drop them into the hot chocolate bowl, stir until soft and fully combined, then lift the bowl off and leave it to cool completely.
Beat 6 chicken eggs with 180g of kOBE Monk Fruit Blend at medium speed until the mixture is combined and foamy.
Lower the speed, pour in the cooled chocolate, beat until combined, then stop the mixer.
Sift in 150g of all purpose flour, add 5g of salt, and fold with a spatula until the batter is smooth and thick.
Pour into a tin lined with baking paper, level the top, and bake at 180 degrees C for 20 to 25 minutes. A skewer pushed into the middle comes out dry when it is done.
Lift the cake out of the tin, let it cool for 1 to 2 hours, then cut it into bite sized pieces.
Tips
Chocolate that catches water seizes up, so keep the bowl and the spatula bone dry while melting.
