Fruit gummies are an easy thing to make with children. They come out clear and lightly chewy, and they smell of real fruit, with the juice doing the work for both color and aroma.
Gelatin is the tricky part, since a hard boil stops it setting. The 25g of gelatin soaks in 70ml of water until soft, then warms gently until fully dissolved, never coming to a rolling boil.
This batch weighs about 385g, at roughly 128 calories per 100g. The gummies set in the fridge, come out of the molds and keep in a sealed box in the fridge. Children love choosing the molds themselves.
Method
Soak 25g gelatin in 70ml water until soft.
Warm the softened gelatin gently until it dissolves completely, without letting it boil hard.
Stir in 90g kOBE Monk Fruit Blend until dissolved.
Add 80ml fruit juice and stir until the mixture is smooth.
Add 1 to 2 drops of vanilla or lemon essence and a little sea salt to balance the sweetness.
Pour the mixture into candy molds, let it cool, then chill until firm and unmold.
Tips
Real fruit juice stands in for artificial flavoring and coloring here.
A hard boil weakens gelatin and the candies will not set.
The mixture pours into the molds while still warm, since it spreads unevenly once cool.
Let the gelatin bloom until completely soft before it goes on the heat, because dry granules leave the candy grainy and unevenly set.
Monk fruit sweetness has a light cooling finish, clearer chilled than at room temperature.
