Jam thumbprint cookies take about 3 hours, most of it chilling. They bake crisp, with a drop of jam sitting in the hollow. The tricky part is jam that spreads in the oven.

One batch keeps well and makes an easy thing to have on hand. A jam that still has fruit pieces in it stays put in the hollow. The dough chills 2 to 4 hours before shaping, since warm dough spreads and loses its shape.

This batch weighs about 341g, at roughly 426 calories per 100g.

Method

  1. Whip 100g unsalted butter with 36g kOBE Monk Fruit Blend using a hand mixer until the butter turns pale.
  2. Add 1 chicken egg yolk, 1/3 teaspoon salt and 1/3 teaspoon vanilla and beat until combined.
  3. Sift 150g all purpose flour into the mixture a little at a time and beat at the lowest speed, stopping as soon as the dough just comes together.
  4. The dough is slightly wet, so rest it in the fridge for 2 to 4 hours until it is cold and will not spread during shaping.
  5. Take the dough out, divide it into pieces of about 7 to 10g, roll them into balls and set them on the baking tray.
  6. Press a hollow into the middle of each cookie with the round end of a fondant tool to hold the jam.
  7. Load the peach or cherry jam into a piping bag and pipe it into the hollows.
  8. Chill the tray for 10 minutes, and heat the oven to 180 degrees C in the meantime.
  9. Bake at 180 degrees C for about 15 to 20 minutes, until the cookies turn golden brown.

Tips

  • A jam that still has fruit pieces in it stays put rather than spreading in the oven.
  • A few small jars of jam make several flavors possible in one batch.
  • Do not overbeat once the flour goes in, because a thoroughly beaten dough bakes tough.
  • A full 2 to 4 hours of chilling before shaping is what holds the shape, since warm dough spreads.
  • Fill each hollow just level, because an overfilled one runs onto the tray and burns.
