Jasmine Oolong Milk Tea, Sweetened with Monk Fruit

Jasmine oolong milk tea made at home gives a base with real depth of jasmine that drinks beautifully cold. The steeping is where it goes wrong, since too long turns the tea harsh and too short leaves it thin and loses the jasmine.

The leaves go into a cloth bag, get pressed 10 to 15 times and steep for exactly twenty minutes, after which the bag is pressed again and squeezed dry.

This batch weighs about 3.5kg, at roughly 45 calories per 100g. Chill it eight hours before pouring. Add toppings as you like for a fuller cup.

Method

  1. Put 90g jasmine oolong tea in a filter bag, tie it shut and drop it into a jug with 2.3 liters boiling water, press the bag 10 to 15 times, then cover and steep hot for 20 minutes.
  2. When the time is up, press another 10 to 15 times to draw out the rest of the tea, squeeze the bag dry and keep the tea base.
  3. Add 400g non dairy creamer powder, 144g kOBE Monk Fruit Blend, 180ml unsweetened oat milk and 2.5ml salt to the tea base and stir until everything dissolves.
  4. Stir in 700g ice cubes until the ice melts, which cools the mixture quickly.
  5. Bottle it and chill at least 8 hours, shaking well before use. It keeps 3 to 7 days and is at its best in the first 3.
  6. For a 500ml cup, measure 150ml milk tea with 15ml kOBE Monk Fruit Blend syrup, stir, pour into the cup, top with ice to the rim and add 1 to 1.5 scoops of topping.

Tips

  • A full 8 hours of chilling is what brings the milk tea together and rounds out the flavor.
  • For a 350ml cup, drop to 100ml milk tea with 10ml syrup.
  • Steep the tea exactly 20 minutes then squeeze the bag, since a longer steep turns the base harshly astringent.
  • Oat milk in place of condensed milk gives a thinner mix, so chill it 15 minutes and stir again before bottling.
  • Drop ice cubes in while the base is still hot to cool it fast, as letting it cool on its own dulls the aroma.
