Kanom Krok Thai Coconut Pancakes, No Added Refined Sugar

Kanom krok comes out as small round cakes with a lightly crisp shell and a soft, coconut rich center. Each one is two layers: a rice flour batter first, then the sweet coconut cream on top.
The difficult part is the timing of that second layer, since pouring too early lets the two run together. The bottom layer needs to set on the surface before the top goes in. The mold has to be properly hot and well oiled, because a cool mold means the cakes stick and break coming out.
This batch weighs about 800g, at roughly 156 calories per 100g.
Method
Put 100g of rice flour, 1/2 tablespoon of glutinous rice flour, 180ml of coconut milk and 240ml of hot water in a bowl and mix until there are no lumps.
In a separate clean bowl, whisk 90g of kOBE Monk Fruit Blend, 1/2 teaspoon of salt and 180ml of coconut milk until fully dissolved.
Brush a little cooking oil into a round takoyaki style pan and heat it over medium heat.
Once the pan is hot, fill each hole two thirds full with the rice flour batter and let the cakes cook for a few minutes.
Pour the coconut and sweetener mixture into the remaining space in each hole.
Cook a few minutes more until the tops set, and keep going until both sides are golden brown.
Lift one cake onto another to make a round ball, arrange them on a plate and serve hot.
Tips
Without a kanom krok pan, a takoyaki pan or a banh khot mold of similar diameter does the job.
Waiting for the bottom layer to set on the surface before adding the coconut layer keeps the two from blending.
kOBE Monk Fruit Blend takes longer to dissolve, so whisk the coconut mixture 5 minutes ahead and stir it again, and the top layer will be evenly sweet.
For the savory sweet version sold in Thailand, scatter corn kernels or chopped spring onion over the tops before they finish cooking.
Running a sharp bamboo skewer around the edge before lifting keeps the cakes round with the base intact.
