Korean Milk Cream Bread

Korean milk cream bread comes out as a soft roll, split down the middle and piped full of cold mascarpone cream. The crust is lightly golden and the cream is whipped stiff so it holds when bitten.

The hardest part is piping cream into bread that has not cooled, since it melts on contact. The rolls have to be completely cool before they are split and filled. The cream needs to be whipped to stiff peaks, because soft cream simply runs out of both ends.

This batch weighs about 796g, at roughly 349 calories per 100g.

Method

  1. Mix 110g of milk, 30g of egg, 31.5g of kOBE Monk Fruit Blend, 3g of salt, 3g of dry yeast and 200g of all purpose flour into a dough, then add 25g of unsalted butter and keep kneading until smooth and supple.
  2. Prove the dough until risen, divide it into 4 equal pieces, shape them and prove them a second time.
  3. Heat the oven to 180 degrees C.
  4. Bake at 180 degrees C for 12 to 13 minutes depending on the oven, and once the tops are golden, take them out and cool them completely.
  5. Whip 300g of whipping cream with 60g of mascarpone cheese, 8g of kOBE Monk Fruit Blend, 11ml of unsweetened oat milk and 22.5g of kOBE Monk Fruit Blend to stiff peaks.
  6. Split the cooled rolls and pipe them full of the milk cream.
  7. Keep them in the fridge and eat within 3 to 4 days.

Tips

  • Without mascarpone, whip 360g of whipping cream with 16g of kOBE Monk Fruit Blend instead.
  • For a chocolate or green tea version, swap 10g of the flour for 10g of cocoa powder or matcha powder.
  • kOBE Monk Fruit Blend takes longer to dissolve, so sift it fine before it goes into the cream, since coarse grains leave the cream gritty.
  • Chilling the bowl and beaters for 15 minutes first helps, because warm cream never reaches stiff peaks.
  • The rolls must be completely cool before piping, as any warmth melts the cream inside the crumb.
  • Piping slowly from the middle out to both ends fills the roll evenly without tearing the crumb.
