Matcha Nama Chocolate, Sweetened with Monk Fruit

Matcha nama chocolate gives soft squares that melt the moment they touch the tongue, with the slight astringency of green tea balancing the richness of the chocolate. The hardest part is cutting sharp edges without the block crumbling.

The cream goes only as far as small bubbles before the heat comes off, since a long boil drives off water and dries the block hard. Cut while the chocolate is still properly cold.

This batch weighs about 560g, at roughly 463 calories per 100g.

Method

  1. Melt 300g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 100g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
  2. Cut 25g of butter into small cubes and set them aside in a separate bowl.
  3. Pour 120ml of fresh cream into a pot and heat it gently. The moment small bubbles appear, take it straight off the heat without letting it boil on.
  4. Tip the warm chocolate and the 25g of butter into the pot of cream and whisk steadily until the mixture is completely smooth and glossy.
  5. Sift most of the 15g of matcha powder into the pot, keeping a little back for dusting, and stir until the colour is even.
  6. Line the base of a square box with baking paper, pour the mixture in slowly, and level the surface with a spoon.
  7. Chill the box for about 5 hours until the block is firm.
  8. Take it out, cut it into bite sized squares, and sift the rest of the matcha powder over each one.

Tips

  • A single drop of water seizes chocolate, so keep the bowl and the whisk bone dry while melting.
  • Warming the knife in hot water and wiping it dry before cutting gives clean edges with no crumbling.
  • Cut straight out of the fridge, because a block left out softens and drags on the knife.
  • Dust the matcha close to serving, since sitting too long draws moisture and dulls the surface.
  • Keep the squares in a sealed box in the fridge and eat within 2 to 3 days.
