How to Make Rolled Wafer Sticks

Rolled wafer sticks come together fast, with each batch spending only 5 minutes in the iron. What makes them good is the thin, crisp shell rolled into a neat tube.

The tricky part is that a cooled wafer stiffens and will not roll any more. Lift each wafer out while it is still hot and pliable and roll it around a chopstick straight away. Sifting the flour before mixing is what gives a smooth surface.

This batch weighs about 451g, at roughly 235 calories per 100g.

Method

  1. Separate the yolks and whites of the chicken eggs into two bowls.
  2. Add 81g kOBE Monk Fruit Blend to the whites and stir thoroughly until it dissolves with no lumps.
  3. Put 50g unsalted butter in its own bowl and beat it hard until soft and smooth, then add the sweetened egg whites and beat until the two come together.
  4. Sift 100g cake flour, add it to the butter and egg white mixture, and beat until the batter is smooth, soft and airy. A hand mixer speeds this up.
  5. Pour the batter into a waffle cone iron and cook at 180 degrees C for 5 minutes.
  6. Lift the wafer out while it is still hot and pliable, and roll it around a chopstick into a tube.

Tips

  • Sift the flour before mixing to catch any lumps, since that is what gives a smooth surface.
  • Roll each wafer while it is still hot, because a cooled one stiffens and will not bend.
  • Beat the butter soft and smooth before the egg whites go in, so the two combine properly.
  • Bake for exactly 5 minutes and take them out at once, since one more minute leaves them hard and impossible to roll.
