Sinh To Dua Bo (Vietnamese Melon Smoothie)

A dua bo smoothie is cooling and quick, about 3 minutes in the blender. The tricky part is the soft center of the melon, wasteful to throw away and gritty with seeds if left in whole. Three melons, about 1kg, make one batch.

The center is pushed through a sieve with a spoon to take the juice, which goes into the blender with the flesh. Five or six ice cubes are enough to blend right away. Chia seeds on top are optional, and the glass is best drunk cold.

This batch weighs about 1.3kg, at roughly 49 calories per 100g.

Method

  1. Halve the 3 melons and scoop the soft center and seeds into a separate bowl. Cut the flesh away from the skin and put it in the blender.
  2. Push the soft center through a sieve with a spoon to take the juice, and add that juice to the blender with the flesh.
  3. Add 200ml unsweetened oat milk, the mixture of 42g kOBE Monk Fruit Blend with 53ml unsweetened oat milk, and about 5 to 6 ice cubes, then blend until smooth.
  4. Pour into a glass, scatter a few chia seeds if desired, and drink while cold.

Tips

  • Unsweetened yogurt in place of the oat milk gives a lightly tangy smoothie.
  • kOBE Monk Fruit Blend needs a few minutes to dissolve in cold liquid, and warm water is faster.
  • The mixture that stands in for condensed milk is thinner, so chill it 15 minutes before blending.
  • Mash the melon pulp and seeds for their juice, since throwing them out loses the most fragrant part of the fruit.
  • Strain the pulp carefully through a sieve for a smooth glass with no gritty seeds.
