The fastest cold glass in the house is this dragon fruit and watermelon smoothie. It pours a pretty pink, tastes lightly sweet, and carries little swollen chia seeds through it. The hard part is straining out the dragon fruit seeds for a smooth texture.

A blender with a filter attachment does the job. Without one, blend and then pass the smoothie through a sieve. The chia seeds go into the glass first and the smoothie is poured over, then stirred so the seeds swell.

This batch weighs about 1.1kg, at roughly 52 calories per 100g.

Method

  1. Wash the dragon fruit, peel it, and cut it into small pieces. Peel the watermelon and cut it the same way.
  2. Put the dragon fruit and watermelon into the blender, fitting the filter attachment to catch the seeds. Without one, blend first and pass the mixture through a sieve.
  3. Add 21g kOBE Monk Fruit Blend with 26ml unsweetened oat milk, 150ml lightly sweetened oat milk and a few crushed ice cubes, and blend together.
  4. Put 2 to 3 ice cubes and the chia seeds into each glass, pour the smoothie over, stir so the seeds swell, and serve straight away.

Tips

  • Pick dragon fruit with a fresh stem and bright skin that feels firm under the thumb.
  • Banana or kiwi can go in alongside the watermelon.
  • Strain the blend through a sieve so the smoothie is smooth with no gritty seeds.
  • Put the chia seeds in the glass first, pour the smoothie over and stir so they swell evenly.

  • Crush the ice before it goes in, since whole cubes strain the blender and leave the smoothie gritty.
