Soy yogurt earns its place with a smooth set and the smell of freshly ground beans. The hard part is watching the temperature and keeping every jar spotless before it goes in to set.

The soybeans soak overnight with a change of water every 3 hours, which stops the milk from souring early. The starter goes in only once the heat is off and the mixture is just warm to the touch. The soy milk simmers gently for 5 to 8 minutes before anything else is added.

This batch weighs about 2.3kg, at roughly 94 calories per 100g. It is ready after 6 to 8 hours of setting.

Method

  1. Soak 200g soybeans in water overnight, changing the water every 3 hours. Sterilize the jars by dipping them in boiling water and letting them drain.
  2. Rinse the soaked beans, blend them with 200 to 300ml water for about 5 minutes until smooth, then strain the milk through a cloth bag and discard the pulp.
  3. Simmer the soy milk over low heat for 5 to 8 minutes until cooked through.
  4. Once the milk is cooked and slightly thickened, turn off the heat, add 161g kOBE Monk Fruit Blend and 201ml unsweetened oat milk and stir until dissolved, then add 1.5 liters oat milk and stir over low heat until the mixture warms up.
  5. Turn off the heat, add 100g yogurt as the starter and stir until it is fully dissolved.
  6. Divide the mixture into glass jars, seal the lids, pack them close together in an insulated box, cover it and leave them for 6 to 8 hours.

Tips

  • Dissolve the first measure of blend and oat milk before the remaining 1.5 liters of oat milk goes in.
  • The starter only goes in while the mixture is warm to the touch, since anything hotter kills the culture.
  • The mixture is looser, so 15 minutes in the fridge after setting firms it up.
  • Strain the soy milk through a cloth bag twice for a smooth jar, because any grounds left leave the surface grainy.
  • Set the jars somewhere still and out of drafts and do not move them partway, since any shaking splits the yogurt.
