Sua dau nanh gives you a glass that is fragrant, rich and smooth, with a gentle pandan scent. The difficulty is the raw beany note and quick souring that follow when the cleaning steps get skipped.

Once the soaked beans are soft, the thin skins have to come off and the beans need several rinses until no foam is left. During cooking, skim the pot clean before the sweetener goes in. A knot of pandan leaves dropped into the pot lifts the aroma.

This batch weighs about 1.3kg, at roughly 350 calories per 100g.

Method

  1. Wash 1kg soybeans, discard any that float, then soak in warm water until soft, 6 to 8 hours in summer and 10 to 12 hours in winter.
  2. Once the beans are soft, peel off the thin skins and rinse several times until the foam is gone.
  3. Work in batches, blending the beans with water at 1 part beans to 1 part water. Rest the blender every 2 minutes or so to protect the motor.
  4. Pour the blended beans into a cloth bag and press out the milk. The pulp can be blended a second time.
  5. Put the milk in a pot and add water to reach the thickness you want.
  6. Set the pot on the stove, drop in a knot of pandan leaves, cover and bring to a boil over medium heat.
  7. Once it boils, lower the heat, skim the foam clean and add 270g kOBE Monk Fruit Blend. Bring back to a boil, stir until dissolved and turn off the heat.

Tips

  • Peeling the thin skins gives the milk a better color and a longer life.
  • For a richer glass, blend in a few peanuts or white sesame seeds.
  • When cooking to sell, make it unsweetened and sweeten each glass to order.
  • Stir kOBE Monk Fruit Blend into a little warm water first, then pour it into the cold liquid.
  • Stir constantly as the milk nears a boil, since a moment away scorches the base and taints the whole batch.
