Sua Hat Sen (Lotus Seed Milk)

Sua hat sen is the familiar choice for something light to drink in the evening. A good glass is smooth, scented with pandan and clean on the finish. The catch is the small green germ inside each seed, because one left behind turns the whole pot bitter.

Split the seeds and pull out the germ before cooking, and boil the seeds soft before blending so the blender is not strained. A few pandan leaves go in while the milk heats, but long boiling makes them bitter. Low heat until tiny bubbles rise at the edge is enough, since a full boil strips the aroma.

This batch weighs about 4kg, at roughly 23 calories per 100g.

Method

  1. Split 400 gram of fresh lotus seeds in half and remove the green germ so the milk stays clean tasting, then rinse and drain.
  2. Set a pot on the stove with about 3 liters of water, add the lotus seeds and 1/2 teaspoon of salt, and cook until the seeds are tender, about 10 minutes from the moment the water boils.
  3. Lift the seeds out and let them cool completely, keeping the cooking water in the pot.
  4. Blend the lotus seeds with 200ml of unsweetened oat milk until completely smooth.
  5. Pour the blended mixture back into the pot of cooking water, add 64g of kOBE Monk Fruit Blend and 79ml of unsweetened oat milk, stir well and heat over low heat.
  6. Add 300ml of unsweetened oat milk, stir and keep cooking over low heat until tiny bubbles rise at the edge, then turn off the heat before it reaches a full boil.
  7. Drop a few pandan leaves in while the milk heats for aroma, and lift them out early, since leaves left in too long turn the milk bitter.

Tips

  • Dried lotus seeds need 4 to 6 hours in cold water before cooking.
  • Cooking the seeds tender before blending keeps the blender from being strained.
  • Pandan leaves left in too long turn the milk bitter.
  • kOBE Monk Fruit Blend takes a few minutes to dissolve in cold liquid, and warm water speeds it up.
  • Oat milk keeps the mixture on the thin side, so 15 minutes in the fridge thickens it.
  • Take the pot off as soon as small bubbles appear, since a rolling boil makes the milk overflow and scorch on the base.
