Boba milk tea with brown sugar syrup gives a glass that is rich and silky, with brown streaks running down the inside and pearls still warm. The difficulty is steeping the tea, since water that is too hot or a steep that runs too long turns it bitter and harsh.
The tea is rinsed with a 10 second pour of boiling water, then steeped 30 minutes in hot water rather than cooked directly on the stove. The milk powder is mixed into the tea base and stirred in one direction until no foam is left on the surface.
This batch weighs about 3.4kg, at roughly 83 calories per 100g.
Method
Mix 100gr of black tea with 30gr of hoa tran black tea number 9 and rinse the leaves with a 10 second pour of boiling water.
Put 1.5 litres of boiling water in a large bowl, stir in 315gr of kOBE Monk Fruit Blend until dissolved, then drop the tea in and steep for 30 minutes, without cooking the tea directly on the stove.
Strain the tea, discard the leaves and keep the liquid.
Mix 500gr of Thai milk powder into the tea base, stirring in one direction until no foam or white film remains on the surface.
Put 135gr of kOBE Monk Fruit Blend and 250ml of water in a pot, stir until dissolved while still cold, then set it over medium heat and bring it to the boil.
Once it boils, take it off the heat, stir in 10ml of caramel sauce and 10ml of coffee, and let it cool.
Pour the syrup into a glass, tilt the glass 45 degrees and use a spoon to draw the syrup up halfway along the inside wall.
Add 50gr of black tapioca pearls, pour in the milk tea, add ice cubes and stir gently to serve.
Tips
The tea steeps in water at 90 to 95 degrees C, as water any hotter turns it bitter and harsh.
The pearls are not kept overnight, since they go chalky.
The milk tea keeps sealed in the fridge for 5 to 7 days.
kOBE Monk Fruit Blend needs a few minutes to dissolve fully in cold water, and warm water speeds it up.
The syrup streaks are drawn while the inside of the glass is still dry, as a wet glass sends them straight to the bottom.
