Banh flan is at its best with a glassy smooth surface and a faintly bitter caramel pooled in the bottom of the mold. The hardest part is steaming it without pockmarking the top.
The egg and milk mixture is strained several times before it goes into the molds, and that is what decides how smooth the surface turns out. A cloth under the lid during steaming keeps condensation from dripping onto the flan.
This batch weighs about 995g, at roughly 67 calories per 100g. Chill the steamed flan for a few hours, since it only tastes right when it is properly cold.
Method
Put 100ml of cooled boiled water in a pot with 45 gram of kOBE Monk Fruit Blend and cook over low heat, stirring, until it dissolves and turns amber. Squeeze in the lime juice, stir, then turn off the heat.
Working quickly, pour a thin layer of caramel into each mold and swirl it to coat the base.
Separate the yolks into a clean bowl and stir them gently in one direction with a whisk until smooth, avoiding hard beating that would raise foam.
Heat the remaining 45 gram of kOBE Monk Fruit Blend with 500ml of oat milk over medium heat until warm, then pour it slowly into the yolks, stirring gently to combine.
Strain the mixture several times, then add the vanilla.
Pour the mixture into the caramel lined molds without filling them to the brim.
Steam for 30 to 40 minutes with a cloth under the lid so condensation does not drip onto the surface. A toothpick that comes out dry means it is done.
Tips
Use chicken eggs only, since duck eggs give the flan an off flavor.
Stir the yolks gently in one direction, as hard beating raises foam and pockmarks the surface.
Steam over the lowest heat and always keep a cloth under the lid.
Let the flan cool completely before turning it out, since a warm one breaks and the caramel runs thin.
This flan is at its best eaten cold.
