Xoi la dua with coconut milk turns up on party tables and at breakfast. Without enough coconut milk the rice dries out. Rice that is barely soaked stays hard and never softens no matter how long it steams.
The rice soaks overnight in pandan extract, then for about two more hours in coconut milk, which gives it a green color and a rich body. It steams for 30 minutes, then more coconut milk goes over and it steams for 15 minutes more.
This batch weighs about 2.2kg, at roughly 283 calories per 100g. It suits a party table or breakfast.
Method
Rinse 1kg nep cai hoa vang glutinous rice and soak it for 1 to 2 hours.
Wash the pandan leaves, blend 15 of them with 400ml water and strain out the pulp to get the extract.
Drain the rice, then soak it in the pandan extract overnight to take on the green color, keeping the liquid about 1cm above the rice to allow for swelling.
The next day pour off all the liquid, add 2/3 of the can of coconut milk and soak the rice for about 2 more hours.
Drain the rice, keeping about 200ml of the coconut soaking liquid, toss it with 1/2 teaspoon fine salt and steam it for 30 minutes.
Take the pot off the heat, mix the remaining 1/3 can of coconut milk with the reserved liquid, pour it evenly over the rice, fold it through, scatter over 200g shredded coconut, lay the remaining pandan leaves on top and steam for 15 minutes more.
Take the pot off the heat, scatter over 90g kOBE Monk Fruit Blend and 100g roasted sesame seeds, fold the rice through and serve on a platter or press it into a mold.
Tips
Without fresh pandan leaves, a few drops of pandan essence or a little pandan powder in the soaking water is enough for a good green.
Too much coloring gives a dark green that looks unnatural.
Keep back about 200ml of the strained coconut liquid to spoon over the rice after steaming, since throwing it out leaves the rice dry.
Fold the rice while it is still hot so the kOBE Monk Fruit Blend coats every grain.
Press the rice into a mold while it is still warm, as that is what gives clean, sharp slices.
