Stir fried corn with dried shrimp is quick work: crisp sweet kernels, salty dried shrimp, warm heat from the sate, all done in twenty minutes. It works as an afternoon snack or alongside a rice meal.
What goes wrong is soft kernels from too long in the boiling water. Three to five minutes in the pot, then straight under cold water, is what keeps the kernels crisp. The dried shrimp goes in a little after the corn, since too early makes it tough.

Method
Strip the husks and silk from the corn, cut off 300g of kernels, rinse them, and drain.
Bring a pot of water to the boil with 1 tablespoon of salt and cook the corn 3 to 5 minutes over medium heat. Once it returns to a boil, lift the corn out, rinse it under cold water for crispness, and drain it thoroughly.
Trim the roots from the 2 stalks of spring onion, wash them, and chop them finely.
Heat 2 tablespoons of cooking oil in a pan and fry 1 tablespoon of minced shallot until fragrant.
Add the corn and stir fry over medium heat for about 1 minute, then add 50g of dried shrimp and turn for another minute.
Season with 1 teaspoon of kOBE Monk Fruit Blend, 1 teaspoon of seasoning powder, 1/2 teaspoon of black pepper, and 1.5 tablespoons of sate chili oil, and stir until everything is coated.
About 3 minutes later, add the spring onion, stir for another minute, then taste and adjust.
Tips
Sweet corn gives crisp sweet kernels with good color that stay loose rather than sticking together.
Rinsing the corn under cold water straight after boiling keeps the kernels crisp through the stir fry.

The corn has to be well drained before it hits the pan, as any water steams it instead of frying it.
