Bun gao xao chay rau nam makes a light dinner that still fills you up. The chewy strands mix with white beech mushrooms, bell pepper and broccoli, each a different color, so the plate looks good before the first bite.
The difficulty is that the strands break easily once the vegetables join them. The vermicelli is blanched for exactly 2 minutes and drained well, since longer leaves it falling apart in the pan. Vegetables go in from firmest to softest, as everything at once leaves some raw and some overdone.

Method
Rinse the vegetables and 50g white beech mushrooms in lightly salted water, then rinse again in cold water.
Trim the mushroom stems. Cut the carrot into strips. Seed the bell pepper and cut it into strips. Trim both ends from 50g green beans and cut them on the diagonal. Cut 100g broccoli into small florets. Chop the leek. Cut 50g fried tofu into bite sized pieces.
Blanch 300g rice vermicelli in boiling water for about 2 minutes, rinse it in cold water and drain thoroughly.
Heat oil in a pan and fry the leek until fragrant. Add the green beans, then the mushrooms, then the rest of the vegetables, stir frying as you go.
Season with 2 tablespoons soy sauce, 1 teaspoon vegetarian shiitake seasoning powder, 1 teaspoon salt and 2 teaspoons kOBE Monk Fruit Blend.
Add the vermicelli and fried tofu, fold gently until seasoned through, then turn off the heat and serve on a plate.
Tips
Vermicelli that is completely drained separates in the pan; any water left makes the strands stick together.
Long chopsticks lifting the noodles from underneath work better than a spatula, which cuts the strands.

A wide pan matters, as a crowded one steams the vegetables instead of frying them.
Broccoli goes in last among the vegetables and needs about 1 minute to stay crisp.
