Gio Heo Ham Atiso (Pork Trotter Soup with Goji and Artichoke)

Gio heo ham ky tu bong atiso gives a clean, sweet broth and trotter meat that falls off the bone. Timing is the difficulty, because artichoke added too early simply disintegrates. Simmer the bones and trotter for about 2 hours until they are properly tender, then add the red dates, goji berries and artichoke for the final 20 minutes.

Cut the choke out of the flower so the broth does not turn faintly bitter. Blanch the bones and trotter in boiling water and rinse them again for a clear broth, and keep skimming as it simmers.

This batch weighs about 4.3kg, at roughly 93 calories per 100g.

Method

  1. Blanch 500g pork bones and 1000g sliced pork trotter in boiling water, then rinse them clean.
  2. Slice 2g ginger thinly. Rinse 4 red dates and 10 goji berries.
  3. Trim the artichoke stem, cut the flower into quarters, cut out the choke inside and rinse it. Rinse the spring onion and cilantro and chop them finely.
  4. Put the pork bones and trotter in a pot with 2000g water and 15g shallot, and simmer for about 2 hours.
  5. Once the trotter is tender, add the red dates, goji berries, ginger and artichoke and cook for another 20 minutes.
  6. Season with 15g seasoning powder, 8g salt, 13.5g kOBE Monk Fruit Blend, 5g MSG and 5g soy sauce to taste.
  7. Ladle into bowls, scatter over the spring onion, cilantro and 1g black pepper, and serve hot with white rice.

Tips

  • Blanching the bones and trotter and rinsing them again is what keeps the broth clear.
  • Cutting the choke out of the artichoke stops the broth from turning faintly bitter.
  • Red dates and goji berries belong in the last 20 minutes, since going in early leaves them mushy and the broth sour.
  • Skim as it simmers, because foam left in place clouds the broth and dulls the smell.
  • Add the spring onion, cilantro and pepper as the soup goes into the bowl, and serve it hot with white rice.
