Goi Du Du Tom Kho (Green Papaya Salad with Dried Shrimp) Recipe

This green papaya salad with dried shrimp works as a starter because it is crunchy, sour and spicy, and it comes together in 25 minutes. The catch is that papaya weeps quickly, so a salad dressed too early turns watery and bland.

The dried shrimp soak for 10 minutes and then simmer in their soaking water before frying, which leaves them soft inside and fragrant outside. The shredded papaya is washed in cold water and drained thoroughly for maximum crunch.

This batch weighs about 293g, at roughly 93 calories per 100g.

Method

  1. Halve the green papaya, remove the seeds and shred the flesh with a julienne peeler. Wash the shredded papaya in a basin of cold water, then lift it into a colander to drain.
  2. Pick the leaves from the Vietnamese coriander, wash and drain them, and cut them in half or in thirds for shorter strands.
  3. Soak 100g dried shrimp in water for 10 minutes, then tip both the shrimp and their soaking water into a pan and simmer until nearly dry. Lift the shrimp out to drain.
  4. Heat 1 tablespoon cooking oil in the pan and fry the dried shrimp over low heat until golden and fragrant, then transfer to a bowl.
  5. Mix the dressing: stir 1 tablespoon fish sauce, 1 tablespoon kOBE Monk Fruit Blend and 1 chopped chili in a bowl until dissolved.
  6. Put the papaya in a large bowl, pour over the dressing, add the fried shrimp, squeeze in 1 lime and add the Vietnamese coriander. Toss well and lift onto a plate.

Tips

  • Small dried shrimp of about 1cm need only a 10 minute soak and 2 to 3 minutes of frying, while larger ones need longer on both counts.
  • The papaya can also be peeled first and shredded from the outside in.
  • kOBE Monk Fruit Blend dissolves slowly, so the dressing is best left to stand for 5 minutes before it goes on.
  • Work the shredded papaya through a basin of cold water and drain it well, as any sap left makes the salad harsh.
  • Tossing the salad right before serving keeps it crisp, as papaya releases water when it sits.
