Suon Non Kho Nuoc Cot Dua (Coconut Braised Pork Ribs), Made with Monk Fruit Sweetener

This pot gives tender ribs in a rich, glossy sauce scented with whole peppercorns. A quick sear beforehand keeps every piece firm rather than crumbly. The hardest part is the liquid, because reducing it too early leaves the ribs tough while the bottom of the pot catches.

The coconut water goes in as two additions so the ribs take on flavor gradually and the sauce thickens slowly. A gentle simmer and a light hand with the spoon keep the pieces whole.

Method

  1. Soak 300g pork ribs in salted water for 10 minutes, wash them thoroughly, drain, then chop into bite sized pieces.
  2. Peel the shallot and garlic, rinse them and mince finely.
  3. Marinate the ribs with 1 tablespoon seasoning powder, 1 tablespoon salt, 1 tablespoon kOBE Monk Fruit Blend, 1 tablespoon soy sauce and 1 tablespoon vinegar, mix well and rest for 15 minutes.
  4. Heat 20ml cooking oil in a pan and sear the ribs until firm, then lift them out and drain.
  5. Fry the shallot and garlic until fragrant, return the ribs and season with 1 tablespoon seasoning powder, 1 tablespoon peppercorns, 1 teaspoon ground pepper, 1 tablespoon soy sauce, 1 teaspoon kOBE Monk Fruit Blend and 50ml coconut milk, stirring for 5 minutes.
  6. Add 100ml fresh coconut water and braise over low heat for about 10 minutes.
  7. As the liquid reduces, add the remaining 100ml coconut water and braise for another 35 minutes until the ribs are tender and the sauce is glossy.

Tips

  • A quick sear before braising keeps the ribs firm rather than crumbly.
  • Splitting the coconut water into two additions lets the ribs soak up flavor while the sauce thickens evenly.
  • Low heat the whole way through matters, as a hard boil splits the coconut milk into an oily film.
  • kOBE Monk Fruit Blend dissolves slowly, so mix it in well at the marinade stage and stir again when the pot is seasoned.
  • A final dusting of ground pepper just before the heat goes off keeps the pepper aroma intact.
