How to Make Trung Ngam Tuong (Soy Marinated Soft Boiled Eggs)

Trung ngam tuong gives you a jar of glossy brown eggs that run golden the moment they are halved. The soy marinade carries garlic chives, onion, toasted sesame and two kinds of chili, so it is fragrant with a gentle heat.

The whole thing turns on the boiling time, and one minute too long sets the yolk solid. Seven minutes in the pot and straight into cold water is what keeps the yolk jammy. Peeling the eggs while they are still sitting in that cold water lifts the shell away cleanly and leaves the surface smooth.

This batch weighs about 1.2kg, at roughly 75 calories per 100g.

Method

  1. Chop the green and red chili. Wash the garlic chives, drain and cut into lengths. Peel the onion and cut it into small pieces.
  2. Put the 8 chicken eggs in a pot with 500ml water and 20ml vinegar and boil for 7 minutes. Lift them into a bowl of cold water, then peel.
  3. Toast 10g golden sesame seeds over low heat, stirring, until golden and fragrant, then turn off the heat and let them cool.
  4. Pour 200ml soy sauce into a bowl and add 200ml water, the toasted sesame, red chili, green chili, garlic chives and onion, then stir.
  5. Add 90g kOBE Monk Fruit Blend to the soy mixture and stir until it has fully dissolved.
  6. Pack the eggs into a glass jar with a lid and pour the marinade over them. After about 1 hour they are ready to eat with steamed rice or bread.

Tips

  • Seven minutes from the moment the water boils is what leaves the yolk jammy.
  • The kOBE Monk Fruit Blend dissolves slowly, so stir the soy mixture again after 5 minutes so nothing settles at the bottom.
  • Vinegar in the boiling water loosens the shells and keeps the eggs from cracking.
  • The eggs need to sit fully under the soy marinade, as any part above the surface colors unevenly.
  • One hour is enough. Past a full day the eggs turn salty and the yolks firm up.
  • Keep the jar in the fridge and use it within 2 to 3 days.
